Still today Casa Modena respects this tradition when producing rigorously a Dop product, or rather certificate in the respect of rigid rules foreseen by the law: only meats of national swines are used exclusively, checking the additives and each phase of the working.

The arrangement of the DEGUSTation is new every time and it's a surprise. With attached info sheet the order of tasting the single specialities is exactly explained. The DEGUSTation for 4 persons contains at least 5 different cheese types with a total weight of approx. 1 kg. and the fitting chutney(s).
Goat milk soft cheese the Algovia. Maturation approx. 30 days. This Camembert is improved with a cream walnuts. As a festive hors-d'oeuvre with nuts for the holidays.
Spicy-sweet mustard purée with a particularly intense flavour. The fruit is candied, then mashed and enriched with selected ingredients. In all versions it is an ideal complement to fresh and mature cheeses, white and red meat, poultry, fish and sausages. Pears mostarda goes particularly well with blue cheeses and white meats.
