Pipe rigate (grooved pipes) come the campania area and belong to the whimsical shaped dried pasta families. They have a grooved snail shell shape they are about 25 mm long and their thickness varies between 1,22 and 1,37 mm.
Pipe rigate are excellent with hearty meat sauces, such as in pork or veal ragùs, with chunky sausage, meat or mushroom sauces; perfect also in summery dishes, light sauces with fresh tomatoes, mozzarella and a touch of basil.
