Profile: It reveals an intense golden yellow colour with light green shades. It results wide and elegant, with smells of artichoke and chicory, enriched with fragrant notes of basil and lesser calamint. Taste is refined and enchanting, with tones of lettuce, black pepper, and in the end a decisive taste of sweet almond. Bitter and spicy tastes are both harmonious. It is perfect with starters of beans, salmon carpaccio, spelt salads, risotto with artichoke, grilled fish, trout marinade, vegetables puree, shellfish first courses, boiled fish, fresh cheeses and baked biscuits
It is produced using white grape Must, acetified and aged in oak barrels to get its typical amber colour. Its most striking feature is that it does not alter the colour of dishes but it adds a fruity and mildly acid aroma and flavour (excellent to replace wine vinegar).

Olive oil recommended for: Vegetables (raw, cooked or roasted), grilled vegetables, potato dishes, sauces, soups, pasta and rice dishes, roasts, grilled meat, fish dishes, cheese and sausages, pizza and bruschetta. This olive oil can be used for cooking as well as raw.
matured for 3 years in different wood barrels. A lively dressing, highly recommended for everyday use.
The resulting olive oil is green in colour with golden reflections and is characterised by a fresh, fruity, nutty and aromatically full flavour.
