Deion:
Pinot Noir South Tyrol is different Pinot Noir in other regions and shows a personality of its own. It is a demanding grape varietal that is doing well in our moderately elevated vineyards, producing a well-structured wine that is ruby to garnet red in colour. It aromas are intense and remind us of dark and red berries, cloves and violets. On the palate this Pinot Noir is elegant and silky, with pleasant tannin and a long finish. It is an excellent companion to roast and steamed meat dishes.
Optics: very dark cherry red, slightly bluish reflections. Odour: intense fragrance; fruity: red dark berries - forest fruits, spicy: clove, cinnamon. Body: lightlyintense, good body, harmonious acidity, tannins well present, soft and integrated, long finish.

Location: Tscherms. Altitude: 430 m. Hillside vineyard: north - north-est. Soil: moraine soils.
Vinification:
harvested by hand in small bins, maceration on the skins at controlled temperature, pumping over of the cap to to intensify the typical aromas, ageing and maturation partly in small wooden barrels and partly in stainless steel tanks.
Food recommendations:
grilled fish, goose, pork, veal, South Tyrolean dishes, Asian dishes with dark meat, sushi.

14 - 16°C.
