With a very fruity nose, this wine has fine, delicate peach and apricot nuances. Its high acidity makes it very fresh on the palate; its unobtrusive minerality makes for a lively finish.
Location and characteristics of the soil: especially in the cooler vineyards above St. Pauls, on deep limestone soil (500 m a.s.l.)
Vine training system: Guyot
Fermentation: slow fermentation at controlled temperature in stainless steel followed by maturation on fine yeast for 5 - 7 months, no malolactic fermentation
Recommended pairings: Aperitif, oysters, other shellfish, asian dishes, appetizers
Serving temperature: 6° - 8°C
