Grapes: 40% Sangiovese, 40% Cabernet Sauvignon, 20% Canaiolo
Brief pre-fermentation maceration. Fermentation with inoculation of selected yeasts. The first 12 months of ageing take place in sixty gallon Allier oak barrels (during which the malolactic fermentation takes place) and are followed by a further 12 months in bottle.
