The wine has a deep ruby red color, ripe and dense. The nose explodes into fruity scents of jam, ripe black fruit with ethereal nuances and vegetal scents, softened by toasted notes, minerals, spices, vanilla and butter. The taste also reveals a wine of great power, in tune with what is perceived by the sense of smell. The high alcohol content enhances the fullness of tannins and at the same time makes it very balanced and harmonious. The finish is decidedly long and pleasant.
Grape varierty: 100% Teroldego (partially dessicadet grapes).
Production area: Choice of grapes the communes of Mezzolombardo and Mezzocorona. vines trained in the traditional Trentino pergola style and the winery's historical "Masetto" vineyard with Guyotstyle vine training.
Vinification: The drying process takes around three months during which the grapes lose 35% of their weight and attain an optimal grape sugar concentration. The stems are removed the partially desiccated and cold bunches and the grapes are fermented at a controlled temperature of 10°. About 10 days later, fulling and the pumpover regime are begun and go on for about 30 days. Then the pomace is separated the new wine, which continues its fermentation in small French oak barrels. Refinement takes some 20 months in oak barriques and is followed by six months of bottle fermentation.
Matching: Excellent meditation wine, its qualities are especially appreciated with red meat and venison.
Serving temperature: 16 - 18°C.
Ageing potential: more than 10 years.
