Deion: This Silvaner pours a bright straw yellow color and has a fine aroma of herbs with some camomile and dry hay, fresh meadow flowers, arnica and dandelion. On the palate, the wine is full and well-structured with a pleasant acidity. It is highly quaffable and has a warm finish. Grape variety: Silvaner - South Tyrol DOC. Production area: The grapes for our Silvaner flourish at an altitude of 500 m on good residual sandy gravel soils on the high-level sites of Bolzano with their south-east exposition. Vinification: After temperature-controlled fermentation of the must in stainless steel tanks at 19°C for one week, the wine is aged in stainless steel. Food pairing: Best enjoyed well chilled with flavoursome hors d’oeuvres, fried fish and mature cheeses. Serving temperature: 12 - 14°C. Ageing potential: 3 - 5 years. Bottle to: 750 ml - 75 cl - 0.75 lt. Allergens: Wine can contain sulphites. Producer: Wine Estate Monastery Cellar Muri-Gries In 2022 the Benedictines moved Muri in Switzerland to Gries in South Tyrol, where the order took over the Augustinian monastery. In so doing, they inherited a long tradition of wine-growing, which they nurtured in the spirit of a symbiosis of monastery, winery and estate that is still very much in evidence today. The result, in the 21st century, is a range of top-quality wines MURI-GRIES like the Abtei Muri line, which has been produced selected grapes the very best sites since 1989. The MURI-GRIES wine estate comprises 35 hectares of vineyards in excellent locations in and around Bolzano and Appiano. The monastery vineyards offer an outstanding terroir, combining excellent soils with a highly favourable climate.

With this wine we want to express the typical nature of the red wines our production area. This red wine is the combination of the lightness and of the Schiava, the pleasant fruity richness of the Pinot Noir and the velvety and quite full-bodied bouquet of the Lagrein. This is a wine that goes well with grilled and roast meats, game and spicy cheeses.
Table Parmesan - an original Italian Stravecchio. The cheese is compact in his structure with little punching, like the Grana (Parmesan). With increasing maturity this cheese tends to become emery and fragile.
