The goat's raw milk cheese of the Untereggerhof in Vals which owes his name to the small, round form and the maturation in chestnut sheets. Maturation approx. 40 days in the natural cellar.
A clean, concentrated floral nose reminiscent of elder and acacia flower with ah hint of sage, leads to a fresh, distinctive palate with nicely rounded fruit, light oak spice and a crisp finish. Enjoy it with a snack of fresh goats' cheese and smoked salmon pâté with crusty bread, or as a partner for lobster tail salad, full-flavoured fish dishes, scallops stir-fried with ginger, or goats' cheese soufflé.
Colour: Full, rich yellow with subtle green reflexes; Nose: Vigorous and forceful aromas, complex reminiscent of elder flower and gooseberry, lightly grassy and smoky; Flavour: Formidable structure, minerally and discreetly aromatic, compact with firm acidity, great presence on the palate and length.
