Grape varieties: Pinot Blanc, Chardonnay, Sauvignon Blanc
Deion: Full, bright yellow with greenish reflexes; a fresh aroma of apple and apricot with a hint of sage on the nose; concentrated and elegant on the palate with excellent length.
Vineyard sites: Castel Campan at Kaltern at 500 m elevation, plus the Eichhorn vineyard at Terlan. Warm sites between 300 and 500 m elevation; the wine's opulence and firm acidity derive the altitude.
Soils: Chalky loam and loess soils at Caldaro and sandy clay on porphyry bedrock at Terlano.
Harvest period: Early to mid-September
Winemaking: The juice is clarified by natural sedimentation, after which it is fermented in large wooden casks without using yeasts. The wine subsequently matures on the fine lees until bottling. Bottle refinement for 1 month.
Serve: 10 - 12 °C
Best enjoyed: With appetisers, fish or white meats.
