PRODUCTION AREA: Sandy, warm and deep soils such as the ones we find in the Bassa Atesina are ideal for Lagrein. The Lagrein vine is native to Alto Adige and grows throughout the Val d'Adige. The Pinot Noir and Schiava grapes are grown on the hillside vineyards of Cornaiano at an altitudes ranging 450 to 500 m above sea level in well aired vineyards.
WINEMAKING: The grapes are picked by hand and placed in small containers to prevent excess pressure on the grapes. After destemming and maceration of 12 hours, a part of the grapes are gently pressed. The remaining part comes a juice extraction high quality grapes. Aging in stainless steel tanks for 5 months.
TASTING NOTES & FOOD MATCHING: A delicate pleasant Rosé wine with a hint of strawberry. Ideal with mediterranean cuisine, as an aperitif or paired with appetizers.

The maturing time for the Speck Riserva is at least one year and the meat is produced only Italian pigs of selected breed. Bacon Riserva gets its special flavour the use of natural sea salt and a light smoking with beech wood and juniper.

Fritz Trafoier's traditional farm in Ulten is known for its deliciously crunchy Schüttelbrot. At a South Tyrolean Marende, Schüttelbrot is the be-all and end-all.
The Kaminwurzen (smoked sausages) are mildly smoked and air-dried sausages of beef and pork, a typical South Tyrolean speciality.
Roasted it tastes especially good and is best served with sauerkraut or roast potatoes - suitably in addition a chill Bavarian beer.
