Winename: "When the vineyard is close to the cellar, the grapes are carried directly there in wooden back carriers called 'Zummen'; otherwise the grapes are transported by wagon on which casks and tuns full of grapes are placed. For crushed grapes the sealable cask called the 'Kastlet' is essential, especially for transport in the steep terrain of the lower mountain slopes". Our Cabernet grapes used to be transported in this cask, and for this reason we have chosen to give it this ancient name.

The milk is curdled with calf rennet in copper kettles over the wood fire. The dough has a compact consistency and a straw-yellow colour, the moulds are matured in the bunker for up to 30 months. The smell is reminiscent of plant and animal notes, and the taste is finely balanced by sweetness and salt. Piquant and in the aroma it reminds of alpine herbs, ripe fruits, walnuts and meat broth.
