Veal sausages have also found in the South Tyrolean kitchen their firm place and are generated after Old-Bavarian recipe. The veal sausages contain veal and pork which is not smoked. Fresh parsley provides for taste and spice. Traditionally it is enough to warm up the veal sausages in hot water and to serve with sweet mustard and a lye pretzel. In addition a Bavarian wheat beer tastes especially well. However, they also enrich records with "cooked Mixed" and Bozner sauce.
The 'Acorn-Fed' Iberian Shoulder Guijuelo (Salamanca - Spain) is a smaller and thinner piece than the ham, as it comes the front leg (shoulder) of the pig. It is cured and matured at the natural cellars of Victor Gomez in the 'Sierra de Béjar', in a process where all details are cared for, in order to give the piece an incomparable texture, an extraordinary juiciness and a special intense flavour.

For the gourmets among us, the delicious wild boar ham is recommended. The meat of the wild boar is not comparable to that of the domestic pig. It is aromatic and dark red in colour. Furthermore, the meat is leaner and firmer than that of the domestic pig.
