Composition: 80% Chardonnay that was aged in small oak casks for twelve months 20% Pinot Noir
Production: Arunda Cuvée Marianna is made using the same techniques that have been applied for nearly three centuries with champagne: a second fermentation of the wine in the bottle with a long period of aging on its own yeast. With Arunda Cuvée Marianna, that lasts for at least forty-eight months.
The work in the wine cellar is also identical. After the aging has been completed in the cellars, the bottles are placed on the riddling racks. Over a period of six weeks, they are riddled by hand (the remuage), being regularly twisted and placed at a progressively steeper angle until the yeast and sediment have been completely transferred the bottom of the bottle to the neck.
The bottles are then disgorged - that is, the yeast and sediment are removed, and the bottles are then refilled with the identical sparkling wine of the same batch and a minimal fine tuning.
Tasting: A lovely, lively perlage is matched by an extravagant and complex bouquet in which flowery notes and accents of honey, white chocolate, and dried fruits all come together. At the same time, components of exotic fruits such as pineapple, grapefruit, and mango become noticeable. The bouquet of the Cuvée Marianna is rounded out by a spicy, freshly roasted note that originates the aging and refining of the still wines in small oak casks.
In the mouth, this sparkling wine immediately shows its tendency toward fullness and substance, thanks to its dense structure and a component that still needs to be "tamed" and find its balance. As a result of its freshness, its luxuriant juiciness, and its tastiness, it is an extraordinary product at every phase up to and including its long-lasting and opulent finish.
Arunda Cuvée Marianna is brimming with the robustness that is characteristic of the great sparkling wines.
It is to be enjoyed along with meals based on fish or white meat dishes that may also be bold.

"Leuchtendes, funkelndes Hellgold mit anhaltender Perlage. In der Nase nach kaltem Rauch und Blutorangen, nach Mandarinen, einem Hauch Pfirsich, dann kandierte Ananas im Nachhall, sehr komplex.
