The South Tyrolean farm bacon is a culinary event of the special kind. The meat comes pigs who are held appropriate to the species on small-structured South Tyrolean farms and are nourished freely of genetic engineering with especially well-chosen feed. The result are the pigs who prove an especially mellow bacon.

The maturing time for the Speck Riserva is at least one year and the meat is produced only Italian pigs of selected breed. Bacon Riserva gets its special flavour the use of natural sea salt and a light smoking with beech wood and juniper.
